- Wash and cut the squash and zucchini into spears, then drizzle with olive oil. Season them with as much or as little salt and black pepper as you like.
- Make sure your grill is hot and ready before adding the veggies. Grill on each side for three minutes, then remove and season with more salt and pepper.

I've tested this recipe and have successfully made it many times. Use my tips to ensure that it turns out perfectly for you, too!
- Clean off your grill grates with a grill brush while the grill is hot. Then use grill spray or half an onion to grease the grates and keep the veggies from sticking.
- Use medium heat if you are cooking just the summer squash and zucchini. If you are cooking meat as well, set the veggies on the edges of the grill grates, away from the main source of the heat. The indirect heat will cook the vegetables, but it does take a little longer.
- Use tongs. Sturdy tongs are best for picking up the spears and flipping them. That way, they stay together, and you can grab and flip in one quick motion.

Recipe FAQs
Both summer squash and zucchini taste great with many different seasonings. You can use simple salt and pepper, or Parmesan cheese, Everything Bagel seasoning, or a combination of powders and seasonings to add fun, new flavors.
The key to grilling soft vegetables without making them soggy is to use a hot grill or grill pan. Also, fast cooking is key, as they release water during cooking. If you let them sit in a pan cooking for too long, they'll sit in the liquid that they release and become soggy.
Technically, yes, but I don't recommend it. You can store leftovers in the fridge and reheat them, but freezing them will change their texture and make them soggy.

Grilled Zucchini and Squash
Ingredients
- 2 zucchini
- 2 yellow squash
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the grill to 350℉.
- Trim the ends off of the 2 zucchini and 2 yellow squash. One at a time, quarter each of the squash into four spears
- Place the 16 spears side by side on a rimmed baking sheet. Drizzle 1 tablespoon olive oil evenly over the squash and zucchini. Season with ½ teaspoon salt and ½ teaspoon black pepper
- Grill over medium heat, skin side up, for 3 minutes, then use tongs to turn the spears to the other non-skin side. Grill for another 3 minutes
- Remove from grill and season with more salt and pepper if desired.
