We all know we should eat our vegetables, but sometimes you just don't want a salad! Grilling your veggies takes them up quite a few notches, and it has definitely changed how we view side dishes during grilling season.

We can't get enough of grilled zucchini and squash alongside our favorite grilled proteins. They are simple to prepare on the grill in a grill basket, but add so much flavor from the grill.

Kabobs are another great way to prepare veggies, and you don't need a grill basket. You can use wooden skewers to pierce a row of mixed vegetables and cook them right on the grill grates, turning them into a colorful, show-stopping side dish or appetizer that's grilled to perfection.

They go with everything from hamburgers to grilled chicken, or you can serve them as an appetizer with a dipping sauce.

Ingredients

To make these easy vegetable kabobs, here's what you'll need to snag at the grocery store:

  • Zucchini
  • Squash
  • Red onion
  • Bell pepper, any color
  • Grape tomatoes
  • Olive oil
  • Salt
  • Pepper
  • Dried oregano
  • Dried thyme
  • Balsamic glaze

Substitutions & Variations

Use any color of onion or bell pepper. I just like the red onion for its pretty purple color!

You could also add small pieces of grilled meat, like chicken or steak. Or keep them vegetarian. It's totally up to you! (Just make sure you use a digital meat thermometer to check the meat is done before you pull them.)

You can sub in any You can also use any neutral-tasting oil that you like, such as avocado oil or vegetable oil. You could also use all-purpose seasoning instead of the herbs if you need a shortcut.

Types of veggies for kabobs & skewers

Veggie kabobs are really easy to mix and match! Swap things out as you need to based on availability or seasonality — or to suit any personal preferences in your family. I get it!

For example, you can swap the grape tomatoes for cherry tomatoes, or even use whole tomatoes that have been halved and quartered.

Of course, feel free to skip any veggies you don't like! You may also mix-and-match and swap in your favorite veggies. Some veggie kabob additions include:

  • mushrooms (buttons are great)
  • brussels sprouts
  • zucchini slices
  • squash slices
  • red onion slices
  • bell pepper (any color)
  • grape or cherry tomatoes
  • eggplant slices
  • pineapple chunks
  • asparagus spears (cut into small pieces)
  • ears of corn (cut into small pieces)

Essential grilling tools

Truthfully, you don’t need more than a good pair of tongs and a grill that works. Whether it’s charcoal, pellet or gas is up to you.

However, if you’re willing to invest in a few tools, you’re setting yourself up for grilling success. Here’s what I recommend:

  • No-stick spray: Weber Grill Spray is the perfect spray to coat the grates and makes it easy to clean.
  • A meat thermometer: Any meat thermometer will work. We have a simple handheld meat thermometer, but I’ve been eyeing the wireless, Bluetooth thermometers.
  • A grill brush: A good-quality grill brush will help you clean off any burnt-on residue without scratching the grates.
  • Kitchen shears: I don’t go a day in my kitchen without using my kitchen scissors, and that goes for grilling too. They are handy for snipping off fatty parts of meat.
  • Utensils: A great pair of tongs and a turner will go a long way in helping you flip anything you cook, from burgers to chicken wings to corn on the cob.
  • Grill basket: Use a metal basket for kebabs, veggies like carrots or cut squash or small cuts of meat that might fall through the grill grates.

Instructions

These veggie skewers are super simple to make on the grill! Here's what we're going to do:

Preheat grill to medium-high heat.

Slice zucchini and squash into ½ inch thick slices. Cut red onion into wedges and bell pepper into 2-inch pieces.

In a large bowl, combine all the vegetables. Drizzle with olive oil and season with salt, pepper, dried oregano, and dried thyme. Toss to coat evenly.

Thread the vegetables onto skewers, alternating the different types. You can go in any order, or arrange them in a rainbow. It's up to you!

Grill the kabobs for 10-12 minutes, turning occasionally, until vegetables are tender and slightly charred.

Drizzle with balsamic glaze if desired before serving.

If you added any meat, use a meat thermometer to make sure they are cooked to a safe temperature. For chicken, 165°F (74°C). For steak, 140°F (60°C) to 145°F (63°C).

What to Serve with Them

These grilled veggie skewers are so good on their own! With a little balsamic glaze, they could even be a vegetarian main dish! Serve them with some warm jasmine rice.

For a party appetizer, serve them with a dipping sauce like homemade ranch. They'd go great with other finger foods (or ones with toothpicks) like buffalo chicken meatballs or tomato bruschetta.

But they are also a fabulous side dish for all kinds of proteins. Try them with grilled chicken breast or grilled pork chops. You could also make other kinds of kebabs, like grilled shrimp skewers, for a standing dinner party.

And for dessert, why turn off the grill? Grilled peaches are a must!
