The Best Breakfast Muffins

Breakfast muffins are the best way to start the day! These are our favorite recipes and tips for making muffins.

Busy mornings call for muffins. There, I said it. I love my smoothies, but there's something about a warm, fluffy muffin to start the day that I just can't get enough of.

We eat a LOT of muffins in my house. A dozen doesn't even last a couple of days with me, my husband and three growing boys in the house!

So I've accumulated a lot of breakfast muffin recipes over the years, and I've compiled a few of my favorites below.

Muffins vs Egg Muffins

You probably imagine the fluffy, bready, cakey muffins made with batter and fillings like blueberries or chocolate chips when you think about breakfast muffins.

A basic muffin recipe is a great one to have in your back pocket so you can bake them with whatever you have on hand.

Breakfast egg muffins are another great morning recipe, though. They are a savory recipe made by cooking beaten eggs (or egg whites) and fillings like greens, meat and vegetables in a muffin tin.

Maybe you're reading this and want to make something a little bigger than muffins, this Mexican breakfast casserole will fit your needs!

The result is a spongey, savory muffin that's much like eating an omelet but in muffin form. (Be sure to grease a muffin tin properly or they can stick and fall apart!)

All this said, I probably wouldn't eat pizza muffins for breakfast!

What to Eat with Muffins for Breakfast

Muffins are a great stand-alone breakfast - they go so well with a cup of great coffee or a fresh smoothie.

But you can also serve them with other breakfast foods for a bigger, more satisfying feast. Muffins go best with savory items, like bacon, eggs or breakfast casserole.

How to Store Muffins

Muffins are best fresh, but they can be just as good a day or two later - or even a month later - if stored properly.

I have a whole post about how to store and freeze muffins, but here's the gist:

Store in an airtight container, lined with paper towels to help collect condensation from residual heat in the muffins. Make sure they are completely cooled for best results.

The best way to store muffins depends on how soon you want to eat them: 

  • Within 3 days of baking them: Store them on the countertop at room temperature. 
  • In the next few days: Store them in the fridge, but with the risk of a change in texture. Alternatively, store what you'll eat in the next few days using the countertop method, then freeze the rest. 
  • Within the next 3 months: Store them in the freezer - reheat when you get a muffin craving!
