If you've followed along for a while, you may remember that I often have a fear of trying to cook new things. There is a strange category of foods that to me seem impossible to make at home. Homemade pesto, steaks and homemade ice cream are just a few of the recipes that I've conquered fear in order to try at home. Meatballs was at the top of the list. I truly have no idea why I was so convinced meatballs couldn't be made well at home.
I decided to reshoot and republish this super old recipe, one of the very first I ever shared on the blog, over three years ago! These chicken meatballs are one of our favorite meals around here. Typically I go traditional and end up serving these baked chicken meatballs over a bed of spaghetti, but there are so many ways you could enjoy these!
Baked meatballs are one of my favorite ways to make meatballs. We cook with so sometimes I try to avoid using pots and pans so we won't have to clean them. Or should I say, so my husband won't have to clean them.
So having a baked meatball recipe on hand is always super helpful when I don't want to add a difficult to clean dish! You can definitely pan fry these though, if you prefer, which is a little bit quicker. You must be careful not to dry out the meatballs though when you cook them on the stove though!

Baked Chicken Meatballs
Looking for an easy weeknight meal? Baked Chicken Meatballs are a quick protein option that can be added to salads, rice, pasta, or even served as an appetizer. These are not your average meatballs, made with ground chicken and packed with flavor!
Ingredients
- 1 lb ground chicken
- ¼ cup bread crumbs (store bought or homemade)
- 1 egg
- ¼ cup parmesan or Italian blend cheese
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat oven to 350 degrees.
- Combine meatball ingredients in a medium bowl.
- Stir really well with wooden spoon or stir and chop tool to make sure the ground ?strings? of chicken are worked out.
- Form into golf ball sized meatballs and place on a lined baking sheet.
- Bake for 20-25 minutes, until meat is thoroughly cooked, to 165 degrees internal temperature
- Serve over a salad, bed of rice or pasta.
Notes
You can also sub ground turkey or ground beef, but cooking times may vary.
