I love to get burrito bowls whenever we grab dinner at a taco place, but did you know you could make burrito bowls for breakfast?!
It is one of my favorite savory breakfasts. Breakfast has always been my favorite meal of the day, if you couldn't tell by all the breakfast recipes around these parts.
From savory recipes like these breakfast frittata muffins to the sweet ones like these healthy lemon blueberry muffins, I am all about a hearty breakfast that's both good and good for you.
If I had it my way, every Saturday would start with a breakfast feast. If I can't have that though, I at least love being able to spend a little time making a home-cooked breakfast that is something other than cereal.
New Mexican Breakfast Burrito Bowl
When Steven and I met, we were both living in New Mexico (though I was there only part-time and the rest of the time I was in North Carolina for college).
In New Mexico, breakfast burritos are a staple breakfast item. Probably more so than pancakes. You can get breakfast burritos at tons of restaurants and fast food places.
When I say breakfast burrito, I mean BIG, HUGE, STUFFED burritos, that are sometimes covered in green chile sauce. They are filling, but they are a dream. I miss them so much!
Even though we're so much closer to New Mexico now, the breakfast burritos in Arizona just aren't the same because of that signature green chile sauce. Not living in New Mexico anymore, we are always craving breakfast burritos.
We decided to try making them at home and even though they can't compare to the nostalgic factor of the ones we get in Albuquerque when we are visiting, being able to make them at home definitely helps fill the void.
But my favorite way to make New Mexican breakfast burritos at home is as a breakfast burrito bowl, complete with roasted peppers and green chile sauce on top.
Breakfast burrito bowls
Sometimes a full-on breakfast burrito can be too filling for an average Saturday morning, so we learned to make them as breakfast burrito bowls. Game-changing!
It's essentially a breakfast scramble that you eat with a fork instead of in a tortilla. The filling is made from scrambled eggs, cheese, bacon or sausage and potatoes, but you can really make them with whatever you want!
I always make shredded cheesy potatoes at the holidays and I use the leftovers to make these breakfast scramble bowls the next day.
We are really in love with putting our breakfast burrito bowls in edible bowls made out of tortillas, AKA tortilla bowls.
What is a tortilla bowl?
A tortilla bowl is a flour tortilla that has shaped to form a bowl, so you can stuff them with your favorite burrito ingredients or maybe even a fajita salad.
We discovered these tortilla bowls from Old El Paso. I love to make homemade tortilla bowls, but when I am busy the storebought ones have completely changed our breakfast burrito game.
If you don't have tortilla bowls or want to skip the carbs, feel free to enjoy these in a regular bowl. They're seriously delicious!
Not only are the tortilla bowls super fun to eat, but they are also less filling than a huge burrito. They're just filling enough that you are satisfied but can still eat lunch later in the day!
Ingredients for breakfast burrito bowls
One of the best parts about these breakfast burrito bowls is that you can make them any way you'd like.
We like to keep these staple ingredients around so that we can easily whip up these savory breakfast bowls:
Some kind of protein — Bacon is our go-to, but sometimes we switch it out for breakfast sausage. You can use vegan sausage, black beans or chickpeas if you like.
Potatoes — If I have the time, I love to make these roasted potatoes, but feel free to use frozen potatoes. (We like Simply Potatoes brand).
Eggs — Cheesy scrambled eggs are what we always use, but you can also use egg whites only. Skip the eggs if you don't like them, or use egg replacers.
Cheese — Go for a high-quality cheese, like a mild or sharp cheddar. It's best if you can grate it yourself, but a bag of pre-shredded is quick and easy. If you like spicy, feel free to throw in some pepper jack cheese as well.
Rice — I don't usually add rice, but you totally could make this a heartier breakfast by doing so. My traditional Mexican rice would be delicious as a base layer under all these toppings.
Sauce — Use your favorite sauce like green chile sauce, salsa verde or even enchilada sauce. This five-minute blender salsa is a favorite in our house. And you can't forget the hot sauce!
Other Toppings — If you have any leftover veggies or a ripe avocado, they would be really delicious on top! Sour cream or guacamole would also be tasty. This is where you can make this burrito bowl your own. Sprinkle on some cilantro if you don't think it tastes like soap. 😉
If you don't want to use the tortilla bowls, you can always serve them as a breakfast tostada on a crispy tortilla, or eat it with tortilla chips instead of a fork! There's really no right or wrong way to enjoy a breakfast bowl, if you ask me.
These bacon scramble breakfast bowls would be absolutely perfect for sharing with someone.

It would be so easy to make a tray of potatoes, bacon and eggs and bring it to them with a few packages of taco bowls and toppings. It is by far one of my favorite recipes to bring to others.

Breakfast Burrito Bowls

Ingredients
- 1 package Old El Paso Tortilla Bowls
- 2 cups breakfast potato cubes
- 4 eggs
- 6 slices uncoocked bacon
- ยฝ cup of shredded cheddar cheese
- ยฝ cup of green chile or salsa, optional
Instructions
- Prepare potatoes following package instructions or this recipe
- Fry bacon on frying pan?or electric griddle. Place on paper towel to drain grease.
- Once bacon has cooled enough to handle, chop into smaller pieces (I love using my kitchen scissors for this!)
- Scramble eggs on frying pan, set aside.
- Warm tortilla boats in microwave for 15 seconds
- Layer eggs, potatoes, bacon bits and cheese.
- Cover with salsa or green chile.
