Ginger Strawberry Mimosa Recipe

My mind is always on recipes that are perfect for brunch, including the perfect brunch cocktails. That is how this Ginger Strawberry Mimosa was born!

You could also refer to it as a Bellini. Mimosas have champagne and OJ, while Bellinis have fruit purée and prosecco. This one has all those elements - strawberry purée, orange juice and sparkling wine.

This brunch cocktail has another little something special. We've had a thing for using ginger ale in our cocktails lately. My husband, Steven, loves ginger ale, so we keep it on hand, and it just sounded like a great addition to this mimosa.

Not spicy in your traditional way of thinking like a jalapeño, but ginger has a full-bodied spice to it that is unmistakable if you're accustomed to it. Bellinis typically have one part fruit purée to two parts bubbly (Prosecco, champagne, soda, etc.). This recipe combines Prosecco, with ginger ale, plus a strawberry-orange juice combination that is heavenly!

Ingredients

Here's your shopping list for this cocktail:

  • fresh strawberries: You could also use thawed frozen strawberries for your purée if you don't have fresh ones available.
  • orange juice: Fresh is delicious, but regular orange juice will work just fine as well. I've made this with mango-orange juice and it's good, too!
  • sparkling wine: Any sparkling wine such as prosecco or champagne works great. I recommend choosing a dry or semi-dry, as the other ingredients are pretty sweet.
  • ginger ale: You can even use ginger beer for an extra punch of flavor.

How to Make Ginger Strawberry Mimosas

The strawberries are puréed in a food processor and then mixed with the orange juice of your choice. Optionally, strain the strawberry purée to remove seeds.

Then, you're ready to make the drinks! Slowly fill a champagne flute about ⅓ of the way full with the strawberry orange juice mixture.

Pour ginger ale over the top. Then add prosecco. (The prosecco will bubble over if you add too much at a time!) Mix cocktail gently with a spoon.

This Ginger Strawberry Bellini is the perfect brunch cocktail for Easter, Mother's Day, or just a brunch with friends! Whatever the occasion, this is the perfect cocktail to help celebrate and relax with friends and family.

They're great with a stunning dish like Breakfast Quiche or a simple Baked Frittata. On the side, we always have fruit salad and breakfast potatoes.

What is the difference between a mimosa and a bellini?

They're quite similar. Both are made with sparkling wine and both have a variation of fruit in them. Traditionally speaking, mimosas have orange juice and French champagne, while a classic bellini is made with puréed fruit (usually peach) and Italian prosecco. This drink has both things that traditionally make a cocktail either a mimosa or a bellini.

Ingredients

  • 8 ounces prosecco
  • 12 ounces ginger ale
  • 8 ounces orange juice
  • 6-8 medium strawberries hulled

Instructions

  • In a food processor or blender, puree strawberries. Optionally, strain the strawberry purée to remove seeds.
  • Pour orange juice into the strawberry purée and mix with a spoon.
  • Slowly add about 1 ounce of strawberry orange juice mixture to each glass.
  • Pour ginger ale over the top. Then add prosecco. (The prosecco will bubble over if you add too much at a time!) Mix cocktail gently with a spoon.

Notes

If you're looking for a mocktail version of this drink, simply omit the prosecco and use all ginger ale!
