A creamy coleslaw is one of the side dishes that I serve with almost every summer meal. It adds the perfect fresh crunch to burgers, barbecue, fish tacos, and more. This easy Greek yogurt coleslaw recipe comes together really quickly, too!

Greek Yogurt Coleslaw Recipe

Coleslaw is one of those sides I often forget about until I'm eating something that could use a little crunch. At that point, I can't help but wonder why I don't make it more often. love how it adds freshness to heavier meals, and it only takes a few minutes to make.

I especially love this creamy slaw because it uses ingredients I almost always have on hand. It is quick and simple enough to make for a weeknight dinner, and it's a must-make for cookouts, potlucks, and family gatherings.

One of the best things about this creamy coleslaw recipe is how little effort it takes. Using a bag of coleslaw mix means the prep is simple. No chopping or shredding can save you a lot of time.

It is also great for making ahead, since the flavor gets even better after a little time in the fridge. The creamy, tangy dressing pairs well with everything from burgers and barbecue to sandwiches and grilled chicken.

Ingredients

One of the reasons I come back to this recipe so often is because the ingredient list is simple.

Coleslaw mix is one of my favorite shortcuts because it takes care of all the chopping for you. Most bags contain a mix of green cabbage, red cabbage, and carrots. If you prefer, you can use about 3 cups of freshly shredded cabbage and carrots instead.

Greek yogurt and mayonnaise give the coleslaw its creamy texture and tangy flavor. If you don't have Greek yogurt on hand, sour cream is an easy swap. Or, you can use a little extra mayonnaise for a more traditional coleslaw dressing.

Variations

Add a handful of chopped fresh parsley or dill for some fresh flavor.

If you like sweeter coleslaw, add a little honey or mix in a handful of dried cranberries.

For a little spicy heat, add a pinch of cayenne pepper or a few dashes of hot sauce will do the trick

Stir in sunflower seeds or sliced almonds for more crunch.

If you'll be using pre-shredded cabbage and carrots, start by making the dressing.

  1. Add the Greek yogurt, mayonnaise, apple cider vinegar, milk, honey, lemon juice, Dijon mustard, salt, and pepper to a large bowl.
  1. Whisk everything together until the dressing is smooth and creamy.

  1. The dressing should be completely smooth before pouring it over the vegetables.
  1. Add the coleslaw mix to a large bowl.

  1. Now, take a taste and add a bit more seasoning if you think it needs it.

Madison's Tips for Success:

I've tested this Greek yogurt coleslaw recipe and have successfully made it many times. Use these tips to ensure that it turns out perfectly for you, too!

  1. Give it time to chill. Even 30 minutes in the fridge helps the flavors come together and gives the cabbage time to soften slightly.
  2. Taste before serving and adjust the seasoning if needed. Sometimes an extra squeeze of lemon juice makes all the difference.
  3. If the dressing seems too thick, stir in a splash of milk until it reaches your preferred consistency.

Storing and Freezing

Store leftover coleslaw in an airtight container in the refrigerator for up to 3 days. Give it a quick stir before serving, as the dressing may thin slightly as it sits.

I do not recommend freezing this Greek yogurt coleslaw. The yogurt-based dressing can separate as it thaws, which affects both the texture and consistency. For the best results, enjoy it fresh from the refrigerator.

Ingredients

For the Dressing:

  • ½ cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons milk
  • 1 ½ tablespoons honey
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

For the Slaw

  • 14 ounces coleslaw mix
  • ¼ teaspoon garlic powder or onion powder

Instructions

  • In a large bowl, whisk together ½ cup plain Greek yogurt, 2 tablespoons mayonnaise, 2 tablespoons apple cider vinegar, 3 tablespoons milk, 1 ½ tablespoons honey, 3 tablespoons fresh lemon juice, 1 teaspoon Dijon mustard, ¾ teaspoon salt, and ½ teaspoon black pepper until smooth.
  • Add 14 ounces coleslaw mix and toss to coat lightly.
  • Refrigerate for at least 30 minutes before serving.
  • Toss again before serving and adjust seasoning if needed.

Notes

If possible, let the slaw chill for 30 minutes before serving. It tastes best when it's cold!
You can shred the cabbage and carrots yourself instead of using bagged coleslaw mix. You'll need 1 cup each of shredded green cabbage, purple cabbage, and carrots.
