Recently my slow cooker has seen a lot more action than it has in years.

Now that we are settled into a routine of having two little ones, we're on the go more often again which means we often need those easy dinners that are ready when we walk in the door after a long day out of the house.

Slow cooker meals are also super necessary during the heat of the summer in Phoenix, which is right around the corner!

After making this Slow Cooker Salsa Verde Chicken for years and recently making Refined Sugar Free Slow Cooker Pulled Pork, I wondered what would happen if I sort of combined the two.

It turns out the Salsa Verde Pulled Pork is just as good as the chicken variation, maybe even better!

My husband often eats something I cook and asks "so what's in this?" Well, for this recipe, it's?almost embarrassingly simple. The secret to this super simple recipe is a jar of salsa verde you buy at the grocery store. That's it.?

I'm not a big fan of leftovers, in fact I purposefully make sure that I don't have many leftovers at all after dinner. Just enough for my husband to take to work. But with this Salsa Verde Pulled Pork, I literally ate the leftovers everyday for lunch.

I use about 2.5 pounds of pork tenderloin and it makes enough for at least ten servings (this of course depends on how much you eat in one serving). You can freeze half of use smaller tenderloins if you don't want quite as much food at once. But it's so nice to know that this recipe can make a ton of food, especially if you need it for a family get together or meal prepping!

Even though this pulled pork has Mexican food flavors, it's totally versatile and can be used for sandwiches, tacos, nachos or just served with a veggie side dish.

Ingredients

  • 2 pounds pork tenderloin
  • 1 jar salsa verde divided in half

Instructions

  • Line a slow cooker with a slow cooker liner or spray with cooking spray.
  • Place tenderloins in slow cooker. Pour about half of the jar of salsa verde over the pork.
  • Cook on low for 5-6 hours.
  • Before serving, add another ¼ of the jar of salsa verde onto pork and use tongs to spread the salsa and break up and serve pork.
