If you've ever looked at a store-bought rotisserie chicken and thought "that's way to difficult to make myself" then you've gotta check out this recipe. Oven roasted chicken is actually way easier than you might think!

This classic dish is perfect to make for a delicious weeknight dinner, or for a fun family dinner or large gathering. It happens to be one of my favorite dishes to make for my family it's so simple to prep. All you have to do is season the outside of the chicken and then bake it until tender with that perfectly crispy skin.

Serve this homemade rotisserie chicken with simple sides like lemon ricotta pasta or oven roasted green beans. It's also great for meal prep since you can repurpose shredded chicken in so many different ways.

Never again will you have to eat a dry rotisserie chicken from the grocery store. You can make the most juicy, tender, fall-off-the-bone oven roasted chicken with this simple recipe!

This is truly my favorite oven roasted chicken! Who knew that making a whole chicken was so easy? No more dry chicken in this house - this easy recipe always turns out super juicy. There's just so much to love about it:

  • You only need 7 simple ingredients to make a perfect roasted chicken. Just a plain ol' chicken and some seasonings can go a very long way!  
  • This oven roasted chicken recipe can be used in lots of different recipes, like my shredded chicken enchiladas. Once the chicken has been cooked, slice or shred it to eat with side or repurpose for tons of meals.
  • It only takes 10 minutes to prep the whole roasted chicken! After that, it is all up to your oven to cook the best roast chicken recipe to juicy perfection. This has become my favorite way to prep plenty of chicken for the week. It's so simple and turns out tasty every single time.

You'll need a few items from the grocery store to make the most delicious roasted chicken. Here's a quick list to add to your grocery list:

  • sea salt
  • black pepper
  • garlic powder
  • paprika
  • onion powder

Substitutions and Variations

Don't have olive oil on hand? Then you can use some avocado oil or melted butter! Another neutral oil would work too.

Feel free to use other herbs and spices as you desire. This classic dish would be great with things like lemon zest, red pepper flakes, Italian seasoning, and so much more.

Fresh herbs and fresh onion or garlic would be great to add to this oven roasted chicken!

How to Make Oven Roasted Chicken

Follow these step-by-step instructions to make this tasty roast chicken:

Preheat your oven to 375°F (190°C) and then prep the chicken by removing anything from the cavity of the chicken and pat dry with paper towels. Place chicken into a cast iron skillet or roasting pan.

In a small bowl, combine the olive oil, salt, pepper, garlic powder, paprika, and onion powder until thoroughly mixed.

Using a spoon, lift the skin on the chicken breast away from the meat and add a spoonful of the seasoning mixture underneath the skin. Then, spread the remaining seasoning mixture evenly over the rest of the chicken. Be sure to gently press the seasoning into the skin with your hands.

Put the skillet or roasting pan on the center rack and cook for approximately 70-90 minutes. Check the internal temperature with an instant-read thermometer after an hour and make sure the skin is not getting too dark.

Once fully cooked, remove from the oven and spoon the juices from the bottom of the pan over the chicken until moist.

Let the chicken rest for 15-20 minutes before slicing the juicy meat. Serve and enjoy!

How to Store Roasted Chicken

Remove the chicken from the bones and then allow it to cool completely before storing. Transfer the chicken to an airtight container or plastic zip top bag, then store in the fridge or freezer.

This leftover chicken will keep in the fridge for 3-4 days or in the freezer for up to 4 days. Allow to thaw before reheating. To reheat, place chicken in the oven with a bit of chicken broth or water to keep it from drying out. You can also use leftover shredded chicken in other recipes - enchiladas, chicken salad, leafy green salads, there's so many things to choose from.

What to Serve with Oven Roasted Chicken

Serve this yummy roasted chicken with simple sides like Instant Pot mashed potatoes, garlic green beans in brown butter, or some roasted root vegetables.

You can also shred up this chicken and use it in recipes like rotisserie chicken enchiladas or chicken tortilla soup.

For a quick dinner, serve up rotisserie chicken with sides like sauteed zucchini or some easy steamed broccoli.

Tips for Success

Here are some simple tips and tricks to help you make a perfect roast chicken every time:

  • Cooking time depends on the size of your chicken and individual oven. Make sure to check the internal temperature of the chicken with a meat thermometer or instant read thermometer and pull it out of the oven once it reaches 165°F (74°C). 
  • Make sure to let the chicken rest for at least 15-20 minutes before slicing into it. This will allow the juices to redistribute throughout the meat and not end up all over the cutting board
  • For best result, allow the chicken to come to room temperature for about 30 minutes before you season it and put it into the oven. This helps the meat to cook more evenly and take less time to cook so that it doesn't dry out.
  • Don't throw away the chicken bones! You can make some homemade chicken stock with the leftovers. I like to store leftover bones in an airtight container in the freezer and then remove them when I'm ready to use them.

FAQ

Should I roast the chicken covered or uncovered? 

I would recommend leaving the chicken uncovered to start, which will allow the skin to become golden brown and crispy. If the skin starts to brown too quickly, then you can cover it with aluminum foil.

Should I truss the chicken legs?

Trussing the chicken legs together is not required to make oven roasted chicken. There are some benefits, like the chicken cooking more evenly, however, it adds about 10-15 of additional cook time. This recipe does not call for tying up the legs, but you can if you want to! If you want to truss the chicken legs, use kitchen twine to tie the legs together snug against the bottom of the chicken breasts.
