Here's the thing: I love baking from scratch. It's one of my favorite ways to spend downtime. But now that I have multiple kiddos, it can be difficult to spend hours on something in the kitchen.

The other thing is, good food doesn't have to be fancy or complicated. Sometimes really good food is also really easy.

That's exactly where this easy bread recipe comes from. We had a box of blueberry muffin mix that had been sitting around for quite some time and it was starting to bother me that it wasn't being used. So I decided to make something a little different with the mix.

This is one of my favorite quick bread recipes since I only need to have four ingredients to make it! Here's what you need:

  • blueberry muffin mix
  • fresh lemon zest
  • lemon juice
  • powdered sugar

Substitutions and Variations

To make this recipe gluten free, grab a box of gluten free blueberry muffin mix. Use as directed in this recipe!

If you want to make this loaf filled to the brim with blueberries, you can absolutely add fresh berries to the batter. Be sure you don't overload it, but fresh blueberries would make this bread extra extra tasty. You can also use frozen blueberries!

Want a different topping option? Make this easy streusel topping and add it to top of the entire loaf before baking. Then it will bake into the bread giving it a slight crunch and extra sweet flavor!

If you want a stronger lemon flavor and/or don't have lemon zest, use a splash of lemon extract in the batter. You can also add a dash of vanilla extract to this recipe to give extra depth to the flavors in this delicious quick bread.

Preheat the oven to 350°F (176°C).

Prepare the blueberry muffin mix in a large mixing bowl according to the instructions on the package.

Then, pour the wet ingredients into a prepared pan, greased well with nonstick cooking spray or lined with parchment paper.

Bake the blueberry lemon loaf for 45-50 minutes, until the center of the loaf is set, golden brown and a toothpick or wooden skewer inserted comes out clean.

Allow the lemon blueberry bread to cool in the loaf pan for about 5-10 minutes. Then, transfer the warm bread to a wire rack and allow it cool completely.

Place the full loaf or slices of the loaf into an airtight container, lined with paper towels to help collect condensation from any residual heat. For best results, just wait for the loaf to cool completely before storing.

Now, the main tip to storing leftovers will depend on how soon you plan to eat them: 

  • Within 3 days of baking: Store the bread on the countertop at room temperature.
  • In the next few days: Store leftover lemon bread in the fridge, but keep in mind that it will change the texture a bit.Alternatively, you can store what you’ll eat in the next few days using the countertop method, then freeze the rest. 
  • Within the next 3 months: Store lemon blueberry in the freezer. For best results, store it unglazed and wrapped tightly in plastic wrap or aluminum foil, and placed in a freezer safe bag.

  • Use fresh lemon juice instead of the stuff you can buy in a bottle at the grocery store. The fresh juice will have a much better flavor and produce a quick bread that is perfectly tangy and sweet!

Ingredients

  • 1 package blueberry muffin mix
