That's exactly where this quick bread comes from. We had a box of blueberry muffin mix that had been sitting around for quite some time and it was starting to bother me that it wasn't being used.
So I decided to try to make something a little different with the mix.
We ALL have those times where we need to make something for an occasion and there just isn't enough time or energy to whip up something from scratch. That's exactly how the recipe for these Strawberry Shortcake Cupcakes came about, too.

To make this quick bread, you need blueberry muffin mix, lemon zest, powdered sugar and lemon. That's it. When you add lemon and blueberry together, like in lemon blueberry cookies you cannot go wrong.
I've learned over the years that making a box mix every once in a while does not devalue the from scratch baking that I do and it's totally okay to rely on convenience every once in a while. Another example: these Lime Crinkle Cookies from Around My Family Table. I don't think anyone would complain about being served those!
This is also a great way to build confidence in the kitchen by learning how to tweak a box mix to make it better than average and save you some time in the kitchen, too!
Lemon Blueberry Bread
This lemon glaze blueberry quick bread is deceivingly easy! It's the perfect quick dessert or breakfast treat!
Ingredients
- 1 package blueberry muffin mix
- Zest from 1 lemon
- ½ cup lemon juice (from one lemon)
- ½ cup powdered sugar
Instructions
- Mix blueberry muffin mix according to package directions.
- Add lemon zest into mix.
- Pour muffin mix into a greased bread pan.
- Bake for 45-50 minutes, or until a toothpick comes out clean.
- While cooling, whisk together lemon juice and powdered sugar. You want the consistency to be thin enough to pour over bread.
- Once the bread has cooled slightly, pour icing over bread.
Notes
You can use a straw to poke holes in the bread for glaze to fill, if you want the bread to be soaked in the glaze!
