For the longest time, I thought making waffles from scratch would be more complicated than it was worth. Once I tried it, I realized they are surprisingly simple, and they taste so much better than anything from the freezer aisle.

What I love most is that these waffles work for just about any kind of morning. They feel special enough for a weekend brunch but are easy enough to make whenever the craving strikes.

And if there are leftovers, that's even better! They freeze beautifully, making busy mornings a little easier.

Ingredients

Baking ingredients on a countertop include all-purpose flour, egg, milk, liquid coconut oil, vanilla, sugar, baking powder, salt, and a bowl of strawberries.

Coconut oil helps create crisp edges and a tender texture. Melted butter can be used instead if that is what you have available. Just be sure to cool the melted butter a bit before mixing it with the milk and egg. Otherwise, the hot butter can curdle the milk and/or cook the egg.

Milk adds moisture to the batter. You can use whatever type of milk you have on hand, dairy or non-dairy.

Variations

Add chocolate chips for a fun breakfast treat.

Stir in blueberries or diced strawberries before cooking.

  1. Whisk the flour, sugar, and other dry ingredients together in a large bowl.
  1. In a separate measuring cup or bowl, whisk together the wet ingredients until smooth.

Storing and Freezing

Store leftover waffles in an airtight container in the refrigerator for up to 3 days.

If you want freezer waffles, let them cool completely first. Then stack them with a sheet of parchment paper between each one. Store in a freezer-safe bag or container for up to 3 months.

Reheat in the toaster, oven, or air fryer until warmed through and crisp again.

Yes, but separating the egg and folding in the whipped egg white helps create a lighter, fluffier texture.

Ingredients

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon white sugar
  • 1 egg
  • ¼ cup coconut oil liquid or melted and cooled
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Preheat waffle iron while mixing your batter.
  • In a large mixing bowl, whisk together 1 ½ cups all-purpose flour, 3 ½ teaspoons baking powder, ½ teaspoon salt, and 1 tablespoon white sugar.
  • In a small bowl, beat the 1 egg, then add melted ¼ cup coconut oil 1 cup milk, and 1 teaspoon vanilla extract. Mix until smooth.
  • Pour wet ingredients into dry ingredients and stir until just combined. Don't over mix.
  • Pour batter into preheated waffle iron. Use ⅓ cup for a standard size waffle iron. Cook for 3-5 minutes until golden brown and crispy.

  • Any kind of dairy or non-dairy milk will work with this recipe. For a richer flavor, use milk with a high percentage of fat.
  • Fully cooked waffles freeze well for up to 3 months. Before freezing, let them cool completely, then stack with parchment or waxed paper between each waffle. Store in a freezer-safe container or zip top bag.
