Brie Puff Pastry Bites Recipe

The holiday season is here, and that means parties, on top of parties, on top of parties. You can easily be the hostess with the mostest when you make tasty appetizers like brie puff pastry bites. Add some festive desserts like M&M Christmas cookie bars to the menu and you are party-ready!

Puff pastry brie bites are a savory sweet appetizer that is just perfect for the holiday season. You've likely heard of cranberry brie bites before, but I decided to shake things up a bit with this recipe. Instead of using cranberry sauce in these bite-sized treats, I use raspberry, apricot or fig jam. It's a small change that makes a world of difference, and makes the brie bites extra unique and special!

Of course, I love cranberry this time of year too. My cranberry orange muffins are seriously so yummy! But I loved changing up a classic appetizer with these brie bites. This has become one of my favorite appetizers to serve at holiday parties, but even throughout the entire year!

Why You'll Love this Recipe

I always get rave reviews every time I serve this appetizer:

  • These are just "fancy" enough for all of your special occasions. Whether it's Thanksgiving appetizers, Christmas treats or a family gathering, brie bites always add a touch of tastiness to any occasion.
  • This is a great last-minute appetizer since it comes together pretty quickly. Throw a batch together whenever you need it!
  • Brie bites have the best texture and flavor. The creamy, melty cheese in a pocket of buttery puff pastry is truly irresistable.

Ingredients

These are the four main ingredients that you need to make tasty brie and jam puff pastry bites:

  • puff pastry sheet
  • brie cheese
  • jelly or jam (raspberry, fig or apricot work well)
  • shelled, chopped pistachios

Substitutions and Variations

Gluten-free version: There are some great gluten free puff pastry options out there now. Just use one of those instead - the other ingredients don't have gluten.

Puff pastry substitute: If you can't find puff pastry dough or don't have it on hand, crescent roll dough and pie crust will work as well. Just keep in mind that it may bake a bit differently, so keep an eye on it while it's in the oven. You can also make homemade puff pastry for this recipe if you want.

Toppings: While I chose to change things up and not use cranberry in this recipe, you can totally use cranberry jelly or cranberry sauce in your brie bites. Chop up some pecans, walnuts, or almonds to use in place of the pistachios!

How to Make Brie Puff Pastry Bites

Follow these few easy steps to make baked brie puff pastry bites for your next party:

Preheat your oven to 350°F (177°C) and then lightly grease a mini muffin tin.

On a lightly floured surface, roll out the puff pastry and then cut into 24 equal squares, about 2x2 inches each.

A muffin tin with puff pastry squares and cheese cubes in each cup, ready for baking.

Press each pastry square into a mini muffin cup, allowing the corners to stick up. Then place a cube of brie in each pastry cup and spoon in about 1 teaspoon of jelly.

Six pastry cups in a muffin tin, each filled with a piece of cheese and a dollop of chutney.

Bake for 15-20 minutes, or until the pastry is golden brown and the cheese is melted.

Sprinkle chopped pistachios over the jelly, allow to cool for 5 minutes, then serve!

How to Store Leftover Brie Puff Pastry Bites

Allow leftovers to cool completely and then transfer to an airtight container. If you have to stack the bites, layer parchment paper between the layers. Store in the fridge for 3-4 days.

You can freeze them in a freezer safe container for up to 3 months as well! Flash freeze them first by placing the leftover bites on a baking sheet, in the freezer for 1-2 hours. Then transfer to a container and store.

What to Serve with Brie Puff Pastry Bites

I love serving these easy brie bites alongside other bite-sized appetizers. Pair them with things like cranberry prosciutto crostini or pear and goat cheese crostini. It's great served with creamy dips like whipped feta dip too!

Brie bites are also perfect to serve alongside a charcuterie board! Even tomato bruschetta is a great savory pairing with this bite-sized app.

If you're serving this for cocktail hour, pair it with drinks like a winter margarita or a cranberry gin cocktail.

Tips for Success

Follow these few simple tips to ensure your brie bites are as yummy as can be:

  • If you don't have a mini muffin tin, you can cut your puff pastry into larger squares and use bigger chunks of brie to bake in a regular muffin pan.
  • Keep the puff pastry cold so that it bakes properly! It does need to thaw if it's frozen, but it's important to the baking process for it to be kept cold.
  • Don't overfill the muffin cups or they'll spill over the sides of the pastry when baking.

FAQ

Should you cut the rind off of brie before baking in puff pastry?

This is totally up to personal preference! The rind is edible, so you can leave it on if you prefer. But you can remove the rind and it will bake just as well.

How do I keep these puff pastry brie bites from sticking to the muffin tin?

You need to grease the mini muffin tin with non-stick cooking spray or butter before adding the puff pastry to each cup. This will ensure they pop out easily after baking!

Keep the puff pastry cold! This is so that it bakes properly! It does need to thaw if it's frozen, but it's important to the baking process for it to be kept cold.
Be careful! Try not to overfill the muffin cups or they'll spill over the sides of the pastry when baking. The sugars in the jam or sauce you use will caramelize and burn quickly if they escape to the hot pan.
