Preheat the oven to 350°F and lightly coat a muffin pan with cooking spray or butter.
Open the can of 8 count biscuits and separate them.
Cut every biscuit into 6 pieces and place them into a large bowl.
Add olive oil, diced pepperoni, shredded mozzarella and Italian seasoning to the bowl of biscuit chunks and stir to combine.
Then, divide mixture evenly into the muffin pan and top with grated parmesan.
Bake for 15-20 minutes. Pizza muffins should be golden brown on the outside and the dough should be cooked through.
Serve warm with marinara sauce for dipping.
