Ingredients

pineapple

Instructions
Cut the top and bottom off the pineapple. Stand it upright and cut away the skin, making sure to remove all the brown "eyes."
Cut the pineapple into rings about ½ inch thick, or into spears if preferred. Use a pairing knife or cookie cutter to remove the core if desired.
In a small bowl, whisk together honey, lime juice, lime zest, melted butter, chopped mint, and salt.
Brush both sides of pineapple with the honey-lime mixture, reserving about half to brush on after grilling.
Preheat the grill or grill pan to medium-high heat.
Grill pineapple slices for 2-3 minutes per side until grill marks appear and pineapple is nicely caramelized.
Transfer to a serving plate and drizzle with the reserved honey-lime mixture.
Garnish with fresh mint sprigs.
Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a pan or enjoy cold.
