red skin potatoes

slices
bacon
cut into ½ inch pieces

diced onions

tablespoons
olive oil

rosemary

paprika

teaspoon
salt
▢

teaspoon
pepper

teaspoon
thyme
Instructions
Preheat oven to 400°F (20°C) .
Spray a baking sheet with non-stick spray. Set aside.
Quarter
15-20 small red skin potatoes
and place in medium mixing bowl.
Dice
¼ cup diced onions
and add to mixing bowl.
Use kitchen scissors or a knife to cut
2 slices bacon
into pieces. Add to mixing bowl.
Add
1 teaspoon rosemary
,
1 teaspoon paprika
,
1 teaspoon salt
,
1 teaspoon pepper
,
½ teaspoon thyme
and
2 tablespoons olive oil
. Toss all ingredients in seasonings.
Roast in oven for 45 minutes, tossing potatoes half way through.
