Avocado Sauce
1ripe avocado
½cupsour cream
2tablespoonlemon juice
2tablespoonwater
1clovegarlicminced
¼teaspoonWorcestershire sauce
⅛teaspoonsea salt
⅛teaspoonblack pepper
Instructions
In a medium frying pan, cook 1 pound lean ground beef until there is no pink (about 6-7 minutes).
While the beef is cooking, use a food processor or immersion blender to combine the ingredients for the avocado sauce (1 ripe avocado, ½ cup sour cream, 2 tbsp lemon juice, 2 tbsp water, 1 clove garlic, ¼ tsp Worcestershire sauce, ⅛ tsp sea salt, and ⅛ tsp black pepper). Mix until smooth.
If your meat isn't extra lean, you may need to drain it when it is done cooking.
Once the beef is cooked, add in ½ cup corn (if frozen, do not thaw first), 1 cup diced tomatoes, ½ cup black beans, and 2 tablespoons taco seasoning to the pan and cook on low to medium heat for 2-3 minutes just for ingredients to warm up or corn to thaw.
Remove the beef mixture from the stove.
Place a scoop or two of the beef mixture into a piece of 4 leaves Iceberg lettuce that is about 3-4 inches wide.
Top with a dollop of the avocado sauce and shredded cheese, if desired. Enjoy!
Notes
If you’re not using lean ground beef (or another lean-based meat) make sure to fully drain it before adding the remaining ingredients.While tortillas will stretch around their filling, lettuce will not. So, make sure not to overfill the lettuce leaves, or they’ll tear.
