This easy Turkey Stir Fry comes together in one pot and in under 30 minutes. It's perfect for weeknight meals or for meal prepping. It's even better as leftovers the next day!
2cupsfreshly shredded carrotsabout 2 large carrots or 4 small
2cupsshredded zucchiniabout 2 medium zucchini
1teaspoonsalt
1teaspoonpepper
¾cuphomemade stir fry sauceadd more to taste
toppingssuch as sesame seeds, green onions or red chili flakes
Instructions
Brown ground turkey in large frying pan. Drain excess grease. Set aside.
Shred carrots and zucchini using a food processor or by hand.
Return turkey to the pan. Stir in veggies. Cook over medium heat covered for about 5 minutes until veggies are soft. Season with salt and pepper.
Add stir fry sauce and mix until sauce is distributed.
Serve over rice and top with sesame seeds, green onions or additional sauce if desired.
Notes
To make homemade stir fry sauce: Combine¼ cup coconut aminos (or soy sauce), ¼ cup sesame oil and ½ teaspoon corn starch in a mason jar with a lid. Shake vigorously to combine. Pour over stir fry or rice. Makes about 1 cup of sauce. Store in the fridge for up to 2 weeks.
