In a small bowl or jar, combine 3 tablespoons fresh lemon zest, 3 tablespoons kosher salt and 3 tablespoons black pepper.
Stir until thoroughly combined.
Notes
For long-term storage, it's important to dry out the lemon zest before you add it to an enclosed jar, which could invite mold. Spread the combined lemon pepper seasoning out on a plate or sheet pan and let it sit overnight or until the lemon zest is crumbly when you rub it between your fingers. Store in an airtight container for up to 3 months.
