Preheat oven to 400ºF. Grease a baking pan and set aside.
Place peaches in boiling water for about 30 seconds, then remove them with tongs and place them in an ice bath. Then peel skins off.
Slice peaches into ½-inch thick slices.
Toss with brown sugar, flour, cinnamon and vanilla.
In a large skillet over medium heat, cook the peach mixture for 4-5 minutes until peaches soften and become saucy. Pour mixture into greased baking pan.
In a medium bowl combine flour, baking powder, baking soda, sugar and salt. Then pour in heavy cream and stir to combine. If the dough is too sticky, add a tablespoon more of flour. You may to fold the dough with your hands.
Use a biscuit cutter or rip dough by hand to form about 9 rough biscuits.
Place biscuits on top of peach mixture. Brush with heavy cream.
Bake at 400ºF for 18-20 minutes until biscuits are golden brown.
Serve with vanilla ice cream or yogurt.
Notes
Taste your peaches after slicing. If they are super ripe, sweet and in season, you may want to reduce the brown sugar by one tablespoon. You can use frozen peaches if desired, but the cobbler may be a bit runnier than fresh peaches. If the dough is too sticky to handle, add a tablespoon more of flour. *Nutrition info does not include yogurt or ice cream.
