Instructions
Preheat your oven to 350°F. Grease a muffin tin or use silicone muffin cups.
In a large bowl, whisk together the eggs and milk until well combined.
Stir in the shredded gouda cheese, bacon chunks, and chopped spinach. Season with salt and a dash of pepper. Mix well.
Pour the egg mixture into the muffin tin or muffin cups, filling each about ⅔ full.
Place in the oven and bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
Let them cool in the muffin tin for a few minutes, then gently remove and transfer to a serving plate.
Serve the egg bites warm for a tasty breakfast or snack.
