¼cupfresh squeezed orange juicefrom 1 large orange
⅛teaspoonsea saltor more/less, to your taste
⅛teaspoonfreshly ground black pepperor more/less, to your taste
For salad
½cupmandarin orange segmentsfresh, or canned with no sugar added
9ouncesbaby spinach
½cupdried cranberries
½cupblackberriesor other berries of choice
½cupgoat cheese crumblesor other crumbly cheese of choice
½cupchopped pistachiosor slivered almonds
Instructions
Measure 2 tablespoons red wine vinegar, 2 tablespoons olive oil, 2 tablespoons honey, and ¼ cup fresh squeezed orange juice into a jar with a lid. Add ⅛ teaspoon sea salt and ⅛ teaspoon freshly ground black pepper. Tighten lid on the jar and shake well to combine ingredients. Taste and add more salt and pepper if desired. Set aside.
Wash and dry 9 ounces baby spinach and ½ cup blackberries. If using canned oranges, drain the juice.
Combine ½ cup mandarin orange segments, spinach, ½ cup dried cranberries, blackberries, ½ cup goat cheese crumbles and ½ cup chopped pistachios in a large bowl. Gently toss with tongs.
Divide salad between 4 bowls, then add dressing to the individual bowls of salad.
Notes
If you don't have a dressing shaker, you can use a mason jar or even a cocktail shaker instead.Don't want to make dressing? Use your favorite store bought dressing instead.For a hearty dinner salad, feel free to top with a cooked protein like chicken or steak.
