Easy Mexican Flatbread


  • Homemade flatbread or naan
  • 1 chicken breast, sliced
  • 1/2 cup of “mexicorn” (corn and pepper mix)
  • 1/2 cup of black beans
  • 1/2 avocado, diced
  • 1/2 tomato, diced

Chile Lime Aioli

  • 1/2 cup mayonnaise
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 3 tablespoons chile lime hot sauce


  1. Prepare flatbread, if necessary
  2. Lightly oil a frying pan
  3. Sprinkle chicken slices with salt and pepper
  4. Cook chicken on pan until fully cooked
  5. Remove chicken from pan and dice when cooled enough to touch
  6. Assemble flatbreads by placing diced chicken, corn, beans, avocado and tomato as desired
  7. Heat flatbreads in microwave for 1 minute or in oven at 350 for 5-10 minutes until hot
  8. Using a small plastic sandwich bag, add aioli and cut off tip of bag
  9. Pipe aioli onto flatbreads
